Pomegranate Marinated Chicken Baked with Apples

In this season I am literally obsessed with pomegranates, I have them every day! I add them to both sweet and savory dishes, drink the juice and eat the seeds.


The seeds in particular remind me of red rubies, so beautiful and shiny. Rich in vitamin C and minerals, pomegranates are a great ingredient from all points of view. Today I want to share a very easy recipe for a main course: pomegranate marinated chicken baked with apples.

The acidity of the pomegranate juice combines perfectly with the sweetness of the baked apples and the chicken's fat envelopes each bite of this dish, making it very comforting for these first days of cooler weather.


I used diced chicken because that's what Vittorio had bought, but of course you can use the same recipe for chicken thighs or other cuts. Hope you will like it :)

RECIPE

POMEGRANATE MARINATED CHICKEN BAKED WITH APPLES Ingredients for 2:

250 gr diced chicken

1/2 cup freshly squeezed pomegranate juice 1/3 cup e.v.o.oil

1 apple

1 crushed clove of garlic

salt

pepper

parsley (or other herb of choice)


Method:

Dice the chicken, place in a soup plate, add a pinch of salt and cover with the pomegranate juice and e.v.o.oil misture. Leave soaking in the fridge for about 1 hour.

Meanwhile, peel the apple, remove core and slice into small cubes.

Pre-heat the oven at 180°. Put the marinated chicken, the apple cubes and the crushed garlic into a greased baking pan and bake for 40 minutes.

When ready, remove garlic, and garnish with parsley, grind some black pepper and pour a few extra drops of e.v.o.oil.

Serve with a grain of choice (in the photos, quinoa and buckwheat) and a vegetable side dish.
