Spoon dessert: mascarpone cream
What a strange spring it has been, a rather chilly and humid one I must say.
As some of you may know, I am longing for Ireland right now, looking forward to seeing my mother and my brother. The departure never seems to arrive... three more nights that look eternal.
It's less than a year that they moved back to Dublin and I have to admit that I miss them both terribly, in a way I wouldn't have expected. Maybe it's because I'm getting older and only now realize how lucky I am to have someone I can always turn to if I need a helping hand, or simply a shoulder to lean on.
Anyway, here in Venice life goes on almost as usual. There are some professional novelties in my life and I must say I am very excited, although I don't want to share anything just yet... after all, I'm Italian and a little bit superstitious :) Just like my husband!
By the way, this post is dedicated to Vittorio. He too is going through 'a period' and because I'll be away for a week, today I made his favorite dessert: mascarpone cream. Normally used to prepare tiramisù, I adapted it to his tastes, which means: a lot more cream and a lot less cookies. Basically, a spoon dessert, absolutely delicious.
It reminds him of his mother, who made the proper tiramisù for years until at a certain point, started preparing only the cream. Not only because it is a quicker preparation, but also because that's what the boys liked the most.
According to Vittorio (who has already finished it!), mine was lighter and airier, easier to eat, but that's just because I whipped everything with the electrical whisk and not by hand! And even though I did give preference to the cream, I also added a few layers of cookies dipped in coffee and the cocoa powder, making it more similar to the original version of tiramisù.
At home I had some plain breakfast cookies, so I used those and didn't bother going to the supermarket to buy the required savoiardi, but of course they absorbed a lot more coffee and became quite moist. So, if like me you are just going to use the biscuits you happen to find in your cupboard, I suggest preparing single portion glasses or cups, and not a large baking pan.

RECIPE:
MASCARPONE CREAM
Ingredients:
250 gr mascarpone cheese
3 free range eggs
10 cookies of choice
50 gr brown sugar
1/2 mug coffee
Method:
Prepare a mocha of coffee and let cool. Separate egg whites from the yolks.
Beat the egg whites until stiff. In a separate bowl whisk yolks and sugar, when ready add the mascarpone cream and amalgamate. Then, slowly add the ehh whites using a wooden spoon, with movements from bottom to top.
Prepare your small cups. Dip the cookies in the coffee, then make crumbles and place them on the bottom of your cups. Add a layer of mascarpone cream, some cocoa, and repeat.
Refrigerate for at least one hour and enjoy!
